I received a package of lovely products from Pack Lite Foods, and here is my review:

Mom's Pasta Primavera

This is by far the best packaged pasta I have ever tried. For all of you pasta and tomato lovers, this is the meal for you. It has many dried tomatoes, along with broccoli, leeks, basil, garlic, peppers and other herbs. While these are classified as backpacking foods, they are a perfect lunch or dinner for a time when all you want to do is have vegan "fast food." There are many different spices, but none of them are to overpowering. All you have to do to cook this meal is fill a cooking pot with two cups of water (if it doesn't boil away all the water, try draining the remainder out, like I did). Bring to a boil and cook for about 5 or so minutes, then let sit for about 10 minutes. This meal will serve one person for dinner, or two for lunch, or for a dinner appetizer. When you are finished cooking you will have a perfect, spicy, but not too spicy dish. Enjoy!

South O' the Border

This dish is a classic example of pork and beans - but without the pork! In place of the pork are peppers, celery, onions, tomatoes, and spices. A perfect meal for backpackers who like beans. Even non-backpacking bean lovers will like this meal. Even if you do not care for beans, it still has great appeal, because the taste of beans is not overpowering; in fact it works well with the spices and vegetables. While at times this meal might come across as being a little spicy, it is mild compared to the bean dishes one might find at restaurants. You can cook this pretty easily by heating 4 cups of water in a pot, bring to a boil, and letting it cook for 5-10 minutes, or sometimes longer. This will feed 2-3 people for lunch, or 2 people for dinner, so grab a fork and dig in!

Vegan cookies with an excellent flavor and texture...hard to believe they're vegan!
