Mama T's Chocolate Chip Banana Muffins

Ingredients:

  • 1/2 cup vegan butter substitute
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • egg replacer to equal 2 eggs
  • 1 1/4 cup flour (any combination of white and whole wheat flour will work)
  • 3/4 cups quick oats, uncooked
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 cup mashed bananas (about 3 medium-sized ripe ones)
  • 3/4 cup semisweet vegan chocolate chips

Instructions:

Preheat oven to 350°F. Cream the butter substitute, vanilla, and sugar in a bowl until fluffy. Add in the egg replacer. In a new bowl mix together the flour, oats, salt, baking soda, and baking powder. Add the mashed banana to the sugar mixture, then add the dry ingredients to the wet. Do not over mix, or the batter will get tough! Stir in the chocolate chips. Spoon into a well-greased muffin tin and bake for about 25 minutes, or until a toothpick or knife come out clean. Makes 12 muffins.

Note: Brittany says, "This is currently my favorite recipe for non-veggie people. My parents have tried a lot of different ideas to try and get a good tasting vegan muffin that doesn't feel heavy. These are a hit with my friends, too."
