Ingredients:

• 1 whole piece of Romaine or Green leaf lettuce
• 1/8 cup alfalfa sprouts
• 1/2 California avocado, diced
• 1 Tbsp. diced tomatoes
• 3 thin cucumber slices
• 1 Tbsp. sliced almonds

Instructions:

Place lettuce on the plate inside up, then top with vegetables and roll up the lettuce with everything inside. Serves one.

Note: Drizzle a peanut sauce over the sandwich for a final touch!
