Ingredients:
3 large sweet potatoes
1/4 cup soy or rice milk
1 Tbsp. soy margarine, melted
1/4 cup brown sugar, or you can try raw sugar
Instructions:
Peel sweet potatoes and place them whole in a pan filled with water. Boil for about 45 minutes to an hour or until they are tender all the way through. Drain water and slice cooled potoatoes into smaller bite-sized pieces. Place in baking dish. Add melted margarine, milk, and sugar. Heat in oven heated to 300 degrees F for 15-20 minutes, or until sugar is caramelized. Enjoy!
